Spicy Kale and Chickpea Soup
With all the cold weather lately, I’ve been in a soup mood. It’s pretty hard to mess up soup and you can always freeze leftovers so it’s a win-win kind of meal. Here’s a variation I made this week.
Spicy Kale Soup

1 tablespoon olive oil
1 large yellow onion, chopped
1 carrot, finely chopped
3 garlic cloves, minced (I use a garlic press)
2-3 Yukon Gold potatoes, diced
6 cups vegetable broth/water
1 teaspoon salt (more or less, depending on the saltiness of your broth)
1/2 teaspoon dried oregano
1/2 teaspoon hot red pepper flakes (or to taste)
1 bay leaf
1 bunch chopped fresh kale
1 16 oz can chickpeas
Saute onion and carrot until softened and onion is translucent. Add the garlic, potatoes, broth, salt, oregano, red pepper flakes, and bay leaf. Cover and cook for 15-20 minutes. Add chopped kale and continue to cook for another 15-20 minutes. Add chickpeas, cook for 5 minutes. Serve with french bread to offset the spiciness.

Vegan Brownies
making these Vegan brownies for my Grandma’s 94th birthday tomorrow! The top of these brownies sometimes have a strange looking texture, but it’s easy to just sprinkle some powdered sugar on the top and make it much less noticeable. They’re really delicious!

- 2 cups unbleached all-purpose flour
- 2 cups white sugar
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup water
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, vegetable oil and vanilla; mix until well blended. Spread evenly in a 9×13 inch baking pan.
- Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares.
